Surfskis for your first season

The first boat is the one you will fall off. That is not a failure mode, it is the whole training method, and it is why the useful question is not which ski is fastest but which one lets you stay upright long enough to build a stroke.

Everything here rates 7 or better for stability. In practice that mostly means beam: the median hull on this page is 52 cm across, and the handful that come in under 48 cm earn their score on hull shape instead, with real secondary stability so the boat leans onto a shoulder rather than dropping out from under you. The cost is speed, and the cost is real: most of these sit at 3 to 6 out of 10, which is a comfortable margin slower than what the people around you at a race will be paddling.

Two things matter more than the ranking. Paddle the boat before you buy it, in the water you will actually use it in, because flatwater stability and downwind stability are different properties. And check the weight fit, because a stable hull loaded far outside its design weight is not stable, it is just wide.
